Orange You Glad For Potatoes?

Behold the sweet potato–orange bounty of good, solid carbohydrate.

Sweet potato fries, sweet potato slices, sweet potato pie!

Here’s one of my all-time favorite post-workout meals, taken directly from my man Coach Jim Steel:
Brown about a pound of ground beef. I like using 85/15, a little leaner than your standard.

While you’re doing that, peel and bake 2-3 sweet potatoes. I actually do these in the micro usually–poke a few holes in the taters with a fork and put them in for 10-12 minutes. You want them to be soft enough to smoosh.

Once the beef’s done and the taters are tender, throw it all into a mixing bowl. Stir and mash.

Portion out 2-4 servings depending upon how big your eaters are and top it with some crunchy cabbage.

And because you’ll need a sauce, I’d like to recommend a nice brown mustard OR a vinegar-based BBQ sauce.

It’s great the first night, but like a good chili, the magic is in the leftovers the next day. Eat them cold with French’s mustard or a splash of apple cider vinegar for a real treat.
